Spring is about bright colors, and tasty combinations of fresh ingredients.It’s about renewal and rebirth, especially when it comes to healthy eating. Especially when in many parts of the world fresh vegetables are just now appearing after a long winter break. 

Fresh, crisp, crunchy, juicy and delectable are just a few of the adjectives that describe our springtime favorites. Check out these five simple spring treats that will leave you wanting seconds, and maybe even thirds.

Baby Potatoes with Dill and Garlic

Potatoes are a staple of Russian cuisine. Baked, fried, sauteed, scalloped or boiled, these beauties make the perfect pairing to any meat or fish dish. Our favorite recipe for spring is boiled baby potatoes basked in quality butter, with fresh garlic and fragrant dill. Just boil your favorite type of baby potato, add a few tablespoons of butter, finely chopped garlic, and fresh dill. The aromas of the dill and garlic come together in a bouquet of fresh springtime flavor.

Green Cabbage and Cucumber Salad

During spring, green cabbage is still sweet, tender and chock full of vitamins including vitamin K, vitamin C, and vitamin B6. It’s also an excellent source of manganese, dietary fiber, potassium, vitamin B1, folate and copper. Coarsely chopped, green cabbage is a tasty alternative to leafy lettuce based salads.

Here’s how to do it: chop the cabbage, dice fresh cucumbers, thinly slice onions, cube green apples, add freshly chopped dill, drizzle with olive oil, a splash of fresh lemon juice and voila! Crisp, fresh and remarkably filling and delicious. 

Cucumber and Radish Salad

This springtime favorite is nutritious and super easy to prepare. Fresh from the farm, crunchy cucumbers, pungent radishes and young green onions are most delicious during this time of year.

Having soaked up the nutrients and vitamins from the sunshine kissed soil, these veggies come together in a medley of spring flavor. Drizzle them with sunflower oil or mix in some fresh sour cream to round out the naturally fresh flavors.

Spring Vareniki with Pesto

Vareniki are perfect anytime of year. Stuffed with mushrooms, potatoes, cabbage, cherries and just about anything you can think of. Think of vareniki as a delicious blank canvas. The stuffing and sauce are what makes it a truly delightful dish. Pour a bit of fresh home-made pesto over your favorite vareniki, and you’ve got yourself a scrumptious springtime soiree.

Garlic Cheese Spring Rolls

When you think of spring rolls, cheese and garlic is probably not what you’re thinking of. But these fresh little gems will be the star of your next appetizer spread. They’re so easy to prepare, and make a “yuge” statement. Gently fold one tablespoon of finely chopped garlic into 12 oz of cream (or farmer) cheese, add salt and pepper to taste. Scoop a spoonful into your favorite spring lettuce cup, top with a thin slice of tomato and enjoy!
